Snow Peas with Lemon Herb Butter

Ingredients
1 1/2 tablespoons unsalted butter, softened
1 teaspoon finely grated fresh lemon zest
1 teaspoon finely chopped fresh tarragon
1 teaspoon finely chopped fresh flat-leaf parsley
1/2 teaspoon salt
1/4 teaspoon black pepper
1 lb snow peas, trimmed
Directions
Stir together butter, zest, tarragon, parsley, salt, and pepper.
Cook snow peas in a 5-quart pot of boiling salted water until crisp-tender, about 1 1/2 minutes, then drain well. Transfer hot snow peas to a bowl, then add lemon herb butter and toss to coat. photo

We love these sweet, delicious peas. You eat these whole, pod and all. They′re often stir-fried very briefly (no more than a minute), but they′re also good raw. They′re easy to prepare, just wash and trim the ends. Some people string them as well, but that′s not necessary. Snow peas that are fresh snap when you break them. Don′t complicate these things... it′s as simple as some fresh ranch dressing and a bowl of peas! Lose the potato chips!

Snow Peas with Toasted Almonds

Ingredients
1 tablespoon unsalted butter
1/4 cup sliced almonds
1/2 pound snow peas, trimmed
2 teaspoons minced shallot
1 teaspoon fresh lemon juice
Directions
Melt butter in medium skillet over medium heat. Add almonds and cook until golden and fragrant and butter begins to brown, stirring frequently, about 11/2 minutes. Add snow peas and shallot; sauté until snow peas are crisp-tender, 1 1/2 to 2 minutes. Remove skillet from heat; add lemon juice. Season to taste with salt and serve. photo
